Instrumental isnt necessarily a good term for rap beats. AN instrumental usually consists of a composition of instruments. Aside from The Roots and a few other rap groups, their are no instrumentals as sythesizers are the main instrument along with snare drums, guitar riffs, etc.
I would have to say though:
1. Shook Ones, Pt. 2 - Mobb Deep
2. Lose Yourself- Eminem
3. Back 2 The Way It Was - Xzibit
4. Paparazzi - Xzibit
5. Black Dialogue - The Perceptionists
Honorable Metnions: The Seed (2.0) - The Roots, Gz And Hustlaz - Snoop Doggy Dogg, Purple - NaS, Rock Da Spot - Redman, Saliva - Viktor Vaughan aka MF Doom, Many More that I can't think of

Survival Of The Fittest - Mobb Deep
Love Song - K-Otix
Fuck Wit Dre Day - Dr. Dre
Gold - GZA (RZA)
Whole of \'Funcrusher Plus\' by Company Flow is worthy of mention...

the instrumentals in rap.
Its called a hook which is why I was confused. Instrumentals are sections within a peice were there are no vocals and the instruments have the melody, like a guitar solo.

Correct me if i'm wrong but isnt a "hook" the chorus, not the beat.
EDIT: Yes i was correct... http://en.wikipedia.org/wiki/Hook_(music)

A hook is the part that makes the song catchy, trust me I learnt that as part of my GCSE and A level music courses.

no, in rap context the \'hook\' is the vocal line, same as in rap context beat refers to musical backdrop and not just drum beat - rap bends the rules

You are correct.
Bulldog you're wrong, sorry. This is hip-hop and with that said; the, "hook" is the chorus of the song.
For further proof download, "What the hook gon be" by Murphy Lee! This song is a perfect example.
Now for other genres of music you'd be right, however, this thread is about hip-hop. :)
