Mine would be Sonic 2 for the Sega Mega Drive. Me and my brother spent 2 years non stop on that thing.
Thoguh there are a lot, I would have to give it to Starcraft. I played that so much when it came out, especially online. It is still a huge game and I could still play it again. Its also gotten lots and lots of awards and honors.
I like it because it is the only strategy game that I have found that is fast paced, fun, and versatile. The 3 different races are almost perfectly balanced and there are so many different strategies you can use that its nearly endless. It's probably the best game I've ever played (and its timeless, look how huge it is in Korea I.E. Starcraft TV) and I'm still waiting for a sequel.

I would definetely have to say Half-life 2. Not only has the sequel lived up to its predeccesor, but it has topped it in a way that no other developer has dreamed of. They recovered from a serious theft of code, and spent their time not only on their engine, but to optimise this engine so that any average joe with a mediocre computer can experience it.
Although there was no real plotline, that is what makes it awesome. We don't know who the Combine are, we don't know who G-Man is except that he is a contracter, and we don't know what happened to Gordon after his acceptance to serve G-Man.
This game also has one of the most widely played Multiplayer mod out at the present, Counter-strike. How can you argue? :D
Simply speaking; Best. Game. Ever.

The whole total war series was brilliant, but Shogun was the most addicting.
For me personally there are three games that I keep playing: Civilization 2, that was without doubt the best of the Civ-games and I still play it a lot, I like it even better than Civ 4 (which I own, but don't play anymore, I do still play Civ 2), my second game is Jagged Alliance 2, which was a very innovative and just hugely cool. And my third all-time favorite is Championship Manager 97/98, which I've played a lot when I just had it, I've replaced it with the newer Football Managers, which have brought loads of new things, but although it got more complicated, it never got much better than that edition of CM, pity it won't run on newer windowses...

I would have to say the Rampage series, me and my brother played that game non-stop on the genesis. There was unlimited levels and you couldn't save, but we didn't know that. So we tried to beat the game in a day.

If I had to break it down to 1 single game, it would be LUNAR: The Silver Star for SEGA CD.
If I break it down by genre:
RPG: LUNAR The Silver Star (SEGA CD)
Racing: Wip3ou7 XL (PlayStation1)
FPS: Starsiege TRIBES (or TRIBES Vengeance)
Puzzle: Katamari
Scrolling Shooters: Quarth (GB/NES), Philosoma (PlayStation1), Radiant Silvergun (SEGA SATURN), or IKARUGA (Dreamcast)
there's some genre's I left out of course, but that's already alot of games listed (and they are my favorites over all else)

My all time favorite has to be Chrono Cross for the PS1. I am surprised none of you RPG nuts have mentioned this game. I played through this game about 7 times (the only way you could see every ending and play with every character) and could easily go home and play it again. I was turned on to it once I played a Chrono Trigger (SNES) emulator on my PC. I am a little disappointed that sequel to Chrono Cross never came together. Maybe they'll get their act together and finish it, A very close second in Phantasy Star Online for both the Dreamcast and the Xbox. I put sooo many hours into that game. I never got any of my characters to level 200, but I successfully got a hunter or 2 to level 170 totally legit.
I can not wait till Phantasy Star Universe comes out for the 360. I will be on that 24/7. Anyone else here getting it?
Big props to Wip on mentioning LUNAR. That whole serious kicks ass. I had Lunar 2 for the PS1 and loved it. But my copy scratched and I was never able to finish it :(

If I had to pick 1 game, period then it would be KOTOR....
But Zelda OoT is up there, with Goldeneye (just played that the other day for the first time and years, and still had some of the maps/levels memorized), Halo 1/2, Mario Kart

The Dizzy games were also very dope, as is Broken Sword 2
All these game makers thinking graphics will increase the immersiveness of a game are so missing the point, the games I mentioned are all 2d but far more engaging and enthralling than any flashy shit ever could be. Substance > style

Indeed. The Baldur's Gate series is actually fairly 2D based, but it is made to look 3D (all games are - but to different extents). Regardless of the graphics, the intricate artwork in it is amazing.

I have to agree wiht SweetIROCCamaro.
BEST game of all time EVER is Chrono Cross! EVER, I freaking love every second of that game.
Runner ups.
RPG: Xeno Saga, Love it almost as much as CC.
ACTION: METAL SLUG X, Very short game, but has a lot of replay value, like the bonus missions which some are so fucking impossible to do, I beat that game so many times. . . really challenging to go through the whole game without dying once.
Adventure: the GTA series, SA is my favorite though, even though a lot of people would disagree.
Driving: Definetly the Grand turismo series. I have been a huge fan since the 1st one for PS1, I have all their games and put a LOTT LOTT LOTTTTTT of time in those freaking games. GT3 is probably the best out.
Puzzle: Tetris DX for the cellular phone, :D.
Simulation: That starfox game for the N64, loved that freaking game.
Sports: Definetly the Winning Eleven Soccer series, #7 and #8 being the best ones.
stradegy: Starcraft with runner up Command and Conquer games, both great. But SC was slightly better.
