Easy, Medium or Hard? I know some games have harder/easier options than hard and easy but most, if not all, have these.
I've been starting on Hard on every game recently. I've realised it gives me a lot more game time since it's more challenging. If I really can't do hard I'll move down to medium (had to do this on guitar hero 2).

If I really like the game, hard, if I'm just killing time then I go medium.

Easy, but I'm starting to try and start on Normal. Easy can be too......well.......easy.

i play a game to begin on medium, if i like it, i play hard.
The game is never really fun on easy.

Normal or Medium, whatever the game defaults too. The only single player games that I replay on extreme difficulty are Metal Gear Solid, and Resident Evil. Much more fulfilling beating them on extreme.

Always Medium/Normal mode.
Easy mode is just too Easy. It's basically a handicap.
Normal Mode is perfect, usually. It gives you the right balance of enemies for a new person into the game who learns everything quickly. Then you get into those situations where you have little ammo and little health and have to resort to saving, running, using ammo sparingly...such a fun experience.
Then after Normal, all I do is play Hard mode because I've already beaten Normal.
I play on normal cause as other people here said, playing on easy makes you feel like a retarded kid.
If I like the game I move on to hard after completing it on normal.

I usually play on medium/normal, and if I enjoy it enough to finish it, i'll put it on hard when I replay it. When it's a game series I already know and enjoy, like Silent Hill, i'll just start on hard.

I start on easy (normal) and change the setting as I get better
example: PGR3

Start on normal, then replay on hard.
I like starting on hard and working my way all the way through if I can handle it. Then I play it again on easy or medium and just breeze through.

First I play easy to get the feel of the game, then hard after. Sometimes I start on the hardest available difficulty, like with God of War II, but it's not frequently that I like a game enough at first to start on hard.

what he said. i like a reasonable learning curve. also, if i'm not having fun, then i may turn the difficulty down.

I start on easy until I get the control down, then move to normal or hard (if its a game-type I played before--like Rainbow 6 etc.)

I usually just start off on hard, then tone it back if I'm having loads of trouble. I figure the best way to learn about the game is have it rape you through your pants right at the beginning.

The only games I can even start at on hard are RTSes because they're all the same. Why would I start a game like FEAR or Baldur's Gate on an excessively hard, frustrating difficulty? It's a total killjoy.
