I'll second Morrowind. Jeremy Soule is fucking EPIC.

Aside from that I'll also say Rome: Total War and Medieval II: Total War. I also got a hold of Titan Quest recently and I've been itching to find away to rip the game music because there are some sweet tracks in the game.

Guild Wars has some cool shit too.

Both of the Baldur's Gate soundtracks are great. Michael Hoenig is a very good composer. I actually listen to them when I'm not playing the games.

The first alundra game had some fantastic music, I appreciated the first grandia game music. I have got the majority of megaman soundtracks and I must admit I have found few weak songs amongst them. Castlevania music is almost always a must with the Castlevania Dungeon hosting some heavy and classical arrangements of tracks.
