It seems like everybody on the internet has a dual core but me, I have a intel pentium 4 3.80ghz hyperthreaded processor, Now the thing is if new games like assassins creed for pc and some others require a minimum of a Dual core processor, what are the chances that it will run or even look good on medium settings,
Kep in mind that i have an nvidia 7900gtx SLI card and i think its a reason why games like crysis and stranglehold, also bioshock runs perfectly, cept crysis had stutters here and there. It kinda avoids a bottleneck on the sli.
So the question is, when will i come across a limit here i inevitably need to upgrade something?

Have you tried googling what the information you need? As in, searching for Dual Core Processors vs 1 Core Processors. Or like find a computer gaming forum you'd have so much more help in a forum that suits the subject you are need for.
Edit; My processor is Intel Celeron 1.7 GHZ, beat that.

funny thing is, I know a guy who runs a small business, building computers(mostly gaming computers) and he is still using an OC'ed single core and his shit runs better(smoother, better looking) than my other friends who just bought gaming computers in the past 3 months.

I have 4 gigs of ram installed on my computer but on Vista 64bit it showes 4gigs, however i reverted back to xp because vista sucks and most thrid party drivers including the network cards don't support 64 bit.

I have a Voodoo 3 that I got like 10 years ago and I can run Crysis on full settings. Its probably my 2 16mb sticks of ram tho.

Not at all. You can get a good single core, or even one of those low end cheapo dual cores(4400+x2 for like $60) you wont be hitting a bottleneck.
I'm running a 3700+ with a 8800 GT and i'm churning 70fps in TF2 with 16AF/8xAA, max settings at 1280x1024.
