Armagetron (www.armagetronad.net)
Mac, Windows, and Linux versions!
Edit:
Forgot the gameplay video:

It's also a decent step in the right direction for explaining some basic game mechanics.
For those of you that don't know what TRON is, or what light cycles are:

And also, go watch the movie!
Now, to the fun stuff:
Armagetron is a fantastic rendition of the lightcycle game from the movie. There's a classic mode, that's pretty much exacly like the movie (with a few rules that are a bit different), and pretty great on it's own. The various tweaks and changes are what really makes this game a blast to play. And it's got online play!
The first rule of the game, don't hit walls, has a slight change to it. Most servers have "rubber" on. Rubber basically protects you from being coredumped (killed) when you hit a wall. As you're "digging" into a wall, your rubber increases, when it maxes out, you die. This gives you a bit more freedom when playing, but it also means that killing other players involves a bit more than just cutting them off.
Speed is also important. You gain speed by riding close to a trail left by a light cycle, or by grinding the trail. It's very common for players to increase their speed by grinding their own trails.
These two small changes definitely make the game much more interesting. There's several other rules and nuances, but the easiest way to learn them is by playing (also, I'm still learning).
If you decide to give this game a shot, I usually play on the Wild West CTF server as HeroismyHero.
