If we consider voice an "instrument", I think "Cantare la voce (http://www.allmusic.com/cg/amg.dll?p=amg&token=ADFEAEE5781FDF46AE7F20E9A70C6DEA955FCD2BF17B A8DE4E746A79F597147AA2435FD540D1B3B9C98636D57FE3FB 31A3450DD3CAEB1AF4D66538378EEEB61145&sql=10:o4o20r5al48j) " an album by Demetrio Stratos, could be one of my all time favourites. No other instruments here, just his amazing voice exploring every single aspect of singing and setting a new standard in this field.
He was probably the greatest singer of all times (no shit), I suggest you listen to some of his songs, just to realize what's the difference between an excellent singer and a wonder of nature.

the example i made is kind of "instrumental, the other way round" thing, no instruments, just voice. I don't htink that could actually be considered a conventional song.

If we're using that logic, then A Perfect Circle's cover of "Fiddle and the Drum" by Joni Mitchell would be on my list. No music, just a bunch of Maynard vocal tracks mixed together in a ragtime kind of way.

Wow, a lot of great ones have already been mentioned (ex. Acid Rain, Overture 1928, Black Star, stuff by Eric Johnson, Electric tears, etc.).

Steve Vai's Boston Rain Melody and Joe Satriani's Love Thing, Crystal Planet, Train of Angels (and a lot of others) are excellent instrumentals.

Blackstratblues' Nights in Shining Karma and Bombay Rain are great too.

Off the top of my heaad

Ytse jam - Dream theater. This is the first dream theater instumental I heard and and really help get me into them. There are loads of other quality instrumentals by dream theater (Stream of consciousness, Erotmania, Instrumedly, Overture 1928 mThe Dance of Eternity and maybe so others I didn't think of.) that are well worth checking out.

All of the stuff by Liquid tension experiment

Orion - Metallica. My favourite metallica instrumetal

YYZ and LA villa strangiato - Rush. Two brialliant instrumentals

Transylvania - Iron maiden.

Maggot Brain - Parliment aka Funkedelic. I think this demonstrates how underated Eddie Hazel really was.
